Dr Fayez Sabri Jaber combined these traditions of ancient knowledge with the latest environmentally friendly biotechnological techniques to create something truly remarkable. The outcome is the phenomenal Jaber Extra Virgin Olive Oil, grown and produced at one farm, using one mill, and guaranteing one exceptional taste that can be recognized immediately. The Dr. Fayez Sabri Jaber farm in Mafraq, in the northern part of the Kingdom encompasses 350 hectares of land with a plantation of over 35000 olive trees of various carefully selected kinds that ensure that our oil has its remarkable taste. Dr Fayez Sabri Jaber farms follow, respect and surpass all the required guidelines for the cultivation and harvest of organic food. Above all, even the water used for the irrigation of our trees can be compared to any top quality drinking water. Our olives are all organically grown, handpicked and processed using the most sophisticated equipment, the pinnacle of centuries of experience. The oil is stored in our stainless steel tanks in a depot with specially regulated atmosphere, using a state of the art climate control system that assures the continuing quality of our oil after pressing. History of Olive OilThe cultivation, harvest and production of olives and olive oil in Jordan can nearly be traced as far back as the first human settlements in the region.While recently published palaeobotanical and genetic research has revealed that the origin of the olive fruit in agriculture is more multifaceted than previously thought, it continues to be believed that cultivation began in the eastern Mediterranean region during the Neolithic period some 8000 years ago. However, the first irrefutable evidence of olive domestication and of oil extraction can be dated to the Chalcolithic period around 4500-3500 BC. The findings at Tulayat al-Ghassul, a Chalcolithic site in the Jordan Valley, just north of the Dead Sea, are an indication of the intricate history that Jordan shares with the cultivation of this fruit. In the ruins of what once was a Ghassulian village, dumps of olive remains have been discovered which not only morphologically corresponded to cultivated olives, but also presented fractures indicative of grinding. The markings on the olive stones indicate olive oil extraction at the locality at around the same time as the rest of the civilizations were developing the first forms of proper writing. To the region, the extraction of olive oil is therefore nearly as old as the word itself.
